Like all No Bake Cheesecakes, this cheesecake needs time to set for a few hours before serving. If you have a sweet tooth and are a fan of no bake cheesecakes, why not try my Biscoff Cheesecake, Nutella Cheesecake Chocolate Cheesecake. If you haven't got a food processor or Thermomix, you can always crush the biscuits with a rolling pin. Popping them in to a plastic bag makes it easier to crush - less mess! All my recipes are made using Kitchen Scales. Though cup measurements are provided, I would highly recommend using Kitchen Scales for accuracy. Nutrition Info

Add the melted butter to the biscuits in a large bowl and mix through using a fork or spoon until fully incorporated. Place a piece of parchment paper on a clean work surface. Invert the cake onto the parchment paper and peel off the layer of parchment that was on the bottom of the cake. Use a 6-inch cake ring to stamp out 2 rounds from the cake. These will be the top 2 cake layers. The rest of the cake scraps will be the bottom layer of the cake. Add in the eggs one at a time, beating on medium-high speed for 1 minute in between each addition. Scrape down the sides of the bowl. Beat on high speed for 4 minutes. Scrape down the sides of the bowl again. You can make the cookie dough and chill it in the refrigerator for up to 2-3 days. Allow to come to room temperature then roll and bake. Roll into 1.5 ounce balls and place 2 inches apart on a parchment lined baking sheet. You can press some extra chocolate chunks onto the tops of the dough balls for a prettier cookie, if desired.All my recipes are made using Kitchen Scales.
