When mixing into cocktails, it’s important to let the unique qualities of the spirit take control, which means choosing one flavor profile and sticking to it. saw the passing of the Excise Act which liberalised distilling but also provided more resources and power to excise officers. The master distiller has ensured that the whiskies from the three different casks have an equal impact on the taste to ensure this balance of flavours.
