This bright gin only needs a small splash of tonic, around 1 part gin to 1 part tonic with a sprig of rosemary or a citrus twist. A classic cocktail that allows you to fully appreciate Height of Arrow’s texture and complex flavours.

The modifiers add layer, mouthfeel and texture; flavour profiles more commonly associated with whisky. The distillery sits in the shadow of Arthur’s Seat that stands at 251 metres above Edinburgh’s old town. It demonstrates the influence of our iterative, holistic approach, who we are as distillers, and where we are going as whisky makers. I was fortunate enough to be sent this bottle as well as the "Bright" version in exchange for unbiased reviews on the vine program.

The challenge when making Height of Arrows for Holyrood Distillery was whether they could make a gin with a whisky maker's mindset.

Alongside juniper are the additions of Isle of Skye salt and natural beeswax, which are added after distillation. Either the day before or morning of the distillation, the three botanicals are added to the pot and macerated in 60% GNS.

Not only did it reflect Arthur’s Seat, but was a name born from pushing to the limits of possibility. In creating Height of Arrows, the distillers sought to create a gin that followed the same principle of utilising a few ingredients to achieve an abundance of flavour. followed by the smooth Isle of Skye sea salt in the finish but it’s the Beeswax that sold it for me! The resulting juniper forward gin is incredibly complex while remaining beautifully smooth to drink.
