Olives for the GIN EVA La Mallorquina come straight from the trees of the Son Moragues Estate, which is situated on the outskirts of the village Valldemossa. By combining botanicals such as olive leaf, oregano, lemon, grapefruit and juniper, we have created a London Dry that captures the spirit of a summer breeze. This connection has fallen away over the interceding years but Black Cats founder has revitalised him in the form of their brand which stands for quality artisan gin, in a bottle labelled with that same cats’ cheeky grin!

One of our responsibilities is to ensure we do not sell age-restricted products online to people who are under the minimum legal age. The olive brings a lovely umami element, while the basil gives a delicate herbal, almost floral, flavour. There's also a helping of lemon and grapefruit in there too, but the focus here is most definitely the gin's savoury elements. Botanicals like rosemary and bay leaf transport you to the Mediterranean, while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.

The stars of the show are Nocerella Olives and Basil, both of which are recognizable, but neither overwhelms the gin.

The name Four Pillars was chosen as a reflection of the four pillars of the gin; the still, the water, the botanicals and their passion for craft. The result is a super dry elegant that is a match made in heaven for a Martini, and is equally delicious in a gin and tonic.Four Pillars Gin was created by wine making and marketing duo Stuart Gregor and Cameron Mackenzie, along with brand guru Matt Jones. La Mallorquina is distilled using the olive pomice after the olives have been pressed for olive oil. Both have a beautiful olive-forward nose, reminiscent of focaccia, which is about as close to sunshine in a bottle as we’ve ever tasted. Black Cat symbol is inspired by the 18th century tale of ‘Old Tom’, the original vending machine, made of circumvent the draconian gin laws of the time.

Savoury notes are clear as you'd expect for a gin with so many herbal botanicals, but the clever thing about this gin is the citrus (both peel and myrtle) that livens up profile.

Inspired by local olive growers, Four Pillars have made an olive leaf and oil infused gin featuring rosemary, bay, corainder with a citrus nose of lemon and grapefruit.
