We created Scottish Scran to not only learn more about Scottish cuisine but to bring it into our home and our kitchen and yours too. The reason is that although a slice of almond sponge topped with toasted almonds is lovely, adding a jam layer and pastry bottom gives it something extra that’ll keep you going back for more. This slice really didn’t last long in our house, and we think it makes a lovely treat that’s just a little bit different to our usual scones or traybakes. Keeping things traditional with the choice of raspberry jam, although you can of course use whatever kind of jam you’d like, or have to hand. Blind baking your pastry is a must and I highly recommend it to avoid a soggy bottom, which is otherwise guaranteed due to the jam layer on top of the pastry.

How much water you need depends on the flour, so we suggest starting with 2-3 tablespoons and then adding more as needed. And if you want to slice almonds at home, blanch the almonds in boiling water for a minute, then rinse under cold water. The the strips of almond are equally tasty when sprinkled into cooked green vegetables (French Beans), green salads, pasta salad or cous cous.

We’ve not tried it ourselves but as all of the elements could be frozen separately we imagine it would be fine!
