The gin was already pretty strong after 24 hours, and I didn’t think it should go another full 24 hours.Even though those little blue berries give gin its signature flavor, pretty much anything that comes from a plant can find its way into this spirit. Each make-your-own Welsh spirit experience lasts 3 hours and includes a bottle of gin or rum to take home. You’ll nurture your gin throughout the distillation process, taking tastings and deciding when to make the cut. Each distillation on our mini-stills will produce approximately one 70cl bottle of gin at around 40% abv. Clear and bright in the glass, the subtle notes of juniper and persistent hints of orange make this gin gentle and approachable.

We’ve got a whole range of fun-filled gin experiences to choose from including gin tasting, gin tours, gin making, bath bomb making with gin, gin afternoon tea and more! When choosing a date and time please note that you will have 15 minutes before the available spaces will be reallocated.

The experience also involves a tasting session showcasing our spirits range, including a selection of our best-loved brands, and any current seasonal releases available at the time of your visit. Using our bespoke online platform, the holder of a Tailor Your Gin Online voucher can select a base botanical recipe and hero botanicals to create a custom gin. You could try bay leaves, rosemary, liquorice powder, lavender, cardamom, cumin, fennel seeds, lemongrass…pretty much anything you fancy.

Once your unique bottle is complete you are a Belfast Artisan Gin School graduate ready to leave with your very own Signature Bottle of Gin for you to share with friends and family… or keep to enjoy yourself! When the recipe is ready you make your own gin on one of our small copper stills, guided by one of our talented distillers. The gin will be a light amber color, instead of clear, because you're not running it through a still after the flavoring. I would definitely ramp up the juniper and other selection of botanicals and add a smaller piece of cinnamon next time because cinnamon was definitely the predominant flavor– and not in a good way.
