Hakushu was built by Shinjiro’s son in 1973 and is one of the largest malt distilleries in the world. There's a distinct spiciness to the palette but it's not overpowering which allows you to notice a distinct depth of flavour. The final blend is an exploration of how ​a single detail can alter the whole alchemy, creating this extraordinary whisky. Made with malt whiskies from the Yamazaki and Hakushu distilleries, as well as grain whisky from the Chita distillery, it's drawn from five different types of cask, including American white oak casks, Sherry casks and Mizunara oak casks. In 2015, it was reported that at least 10 malt and grain whiskies were used from three distilleries ( Yamazaki, Hakushu, and Chita [12]), aged in five different cask types, with some elements aged up to approximately 20 years or longer.The Hibiki Japanese Harmony is the culmination of nearly a century of whisky-making from Japan's first ever whisky producer: Suntory. Born on April 3, 1989 to commemorate the 90th anniversary of the Suntory Corporation, Hibiki was created to be the face of Suntory blended whisky. This is a benchmark Japanese whisky that is smooth and gentle, with aromas and flavours of honey, candied orange peel, white chocolate, rose,.

I thought it will be very different than Scottish whisky and maybe not good enough but it was a big surprise for me, something new but still whisky and really nice one. Chief Blender ​Shinji Fukuyo and his team of blenders challenged ​themselves to rethink the Art of Blending, using the legendary Japanese Mizunara oak rather than the more traditional sherry cask. Hibiki hit me like a blended whisky acidic nose and assaulted the throat and back of my nose, quite smooth on the palette no afterburn but it felt like an AI version of whisky rather than a whisky itself if that makes sense !

I’d definitely say the hibiki doesn’t really taste like a “true whisky” but at the same time it definitely is a whisky- sounds contradictory but hear me out. Palate: a surprisingly dry mouthfeel, and a lightly sweet, then chilli-pepper taste, at full strength, mellowing with a little water.
