Conclusion: A very successful experiment IMHO. While not overly ‘wild’ the Allta is highly drinkable and offers a different flavor profile than your average Glenmorangie. Among the better Private Edition of recent years. Always fun seeing such editions emerge from big whisky brands, who allow themselves to experiment with different parameters that affect the whisky. The wild yeast was cultivated from the barley fieldand then propagated in a lab for use during the fermentation process. Glenmorangie Allta – Scots Gaelic for ‘wild’– is thought to be the first Scotch whisky produced using a new strainof yeast.

While Allta is a one-off limited edition, Glenmorangie has continued to use the combination of Diaemath and Cadboll barley almost every year, with a week of production dedicated to it. While we probably won’t see an ongoing ‘wild yeast’ bottling, it will no doubt work its way into other whiskies in the future – another paint in Dr Bill’s flavour palette.In addition to the yeast and barley, the Allta also uses a large amount of 2nd fill casks to better highlight the spirit itself. It’s also the highest ABV release in the Private Editions releases. With so many factors in play it’s hard to say what is responsible for changes over the 10, but all I’m hoping for is that it’s good. Lumsden said: ‘Glenmorangie Allta is a worthy whisky with which to mark the Private Edition’s 10th anniversary. Banana pudding, dried tropical fruit, Sunkist Fruit Gems, graham, cocoa, waxy vanilla taffy, baking spice and a bit of olde candy. Previous editions have included Glenmorangie Ealanta (2013), matured in virgin American oak casks; Glenmorangie Tusail (2015), made using floor-malted Maris Otter barley; and Glenmorangie Spìos (2018), matured in ex-American rye whiskey casks. On the question of yield, I spoke with Glenmorangie’s Dr Bill Lumsden, the man behind the whisky, and asked if using this wild yeast had resulted in a lower yield? Indeed, he advised that the yield was about 15% lower for the week’s worth of distillation in question. In truth, he was expecting an even lower outcome, so the final volumes produced were actually pleasing. But it’s possibly somewhat academic…in Bill’s words, “I’ll happily sacrifice yield for flavour!”

After a few sips, the fruitiness shows more, but it never takes over and that heavy oakiness stays present and constant. But I’m ok with that. I can see how it would be distracting to some classic single malt lovers, but as someone who also loves bourbon, I find the oak in the Glenmorangie Astar to be warm and inviting. The tenth, and so far final, release in the Private Editions line was the Glenmorangie Allta (2019). Its name translates to wild and is in reference to a unique strain of wild yeast Dr. Bill discovered on their Cadboll barley. The news of this year’s release, however, got me a bit excited. The 2019 Private Edition, named Allta (which is Gaelic for “wild”) is a whisky experiment I’ve long been curious to see made—a single malt whisky using a non-standard yeast strain. And not just a proprietary yeast strain cultivated in a lab, but a wild yeast. The original Glenmorangie Astar was released in 2008. This is the re-release from 2017 and you can, kinda, think of it as a cask strength version of The Original 10, but with a twist. That twist being the exact casks used.

Funny thing about yeast—it’s basically everywhere. Wherever you find life on Earth, you will probably find yeast. It’s actually quite an interesting topic, particularly in regards to making alcohol. If you’re interested in reading up on the science of yeast and alcohol production, I highly recommend a book called Proof: The Science of Booze by Adam Rogers. It’s a terrific read. Comment: A combination of crunchy fruit and softly spicy spirit with Glenmorangie’s trademark creaminess and American-oak vanilla notes, with apples and pears providing a bridge. Palate : Oily and full with a fun combination of sweetness, citrus fruit, a nice maltiness, and sweet pastries alongside grapefruit , Scottish tablet, and a honeyed note which is nicely balanced by the lemony notes. There’s quite some wood indeed, but not overpowering, and i find it contributes to the balance and complexity. Fun stuff and easy sipping at 51.2% abv even without water. There’s some of the pine in the finish too, and it’s very long and spicy, with the linger long in the gullet and inside the cheeks. ConclusionMusty oak, honey, dried orchard fruit, nutmeg, wax beans, aloe vera and touches of vanilla, caramel and banana taffy. The annual release of the new addition to Glenmorangie’s Private Edition series is always a highlight of the whisky calendar, and 2019 sees the release of Glenmorangie Allta. This is the 10 th anniversary of the Private Edition series and, like all the years and releases before it, Allta doesn’t fail to delight.
