It is slightly sweeter with a more rounded mouthfeel than a London Dry Gin, with the Pedro Ximénez casks used influencing our Old Tom Gin interpretation. Fermanagh, Ireland, made by steeping wild-grown, handpicked sloe berries for six months in a bespoke gin. Only the best organic ingredients are used at The Boatyard Distillery, and where possible only local ingredients are selected. Light and elegant on the palate, the floral notes are balanced by the sweetness of the licorice root, with a hint of vanilla that develops on the finish.
