Description

An ultra-premium gin, distilled from a single specimen juniper bush, bottled at still strength, therefore, holding more of the essential oils from the botanicals, changing the dynamic of the gin. We suggest you serve over ice with a good quality tonic and a flamed orange twist. Producing their first small batch of just 200 bottles in 2013, Crossbill are now running at full production and a good thing too as demand for their highly acclaimed gin is now taking off. Welcome to our Gin Distilling class where we offer a unique experience for gin enthusiasts and curious minds alike. In our class, you will have the opportunity to distil your very own gin using copper mini stills and a selection of botanicals of your choice. The result is an intense concentrated dry gin that captures an unequalled level of freshness. A tribute to a rare and magnificent native Highland conifer.

But I reject this notion. When I talk about a Scottish gin, I don’t want to just be technical: sure the distillery is there… but it’s not really Scottish, now is it?* When it comes to accommodation in Scotland, there's a fantastic choice of amazing stays from luxury hotels to glamping getaways. Once a year, juniper from this ancient bush is gathered by hand along with wild rosehip that grows nearby, taken to Glasgow where it is then slowly macerated and distilled in a copper pot Bain Marie still. Re: Crossbill Gin: when I think “Place”-ish gin, I don’t simply think of the physical location of the distillery. Plenty of gins, right or wrong can claim to be “Scottish” based on this alone. As if simply placing your building there allows you to claim something of the land. Neat: Balanced, elegant almost, little oily. Big hints of juniper with a quite sharp, dry finish. Rosehip lines a citrus edge to the finish.Discover wonderful wildlife tours to book and experience in Scotland, including bird watching safaris, whale watching, farm tours and much more! A rare, special edition dry gin. Produced using the juniper of a single specimen bush, aged around 200 years old, which grows wild in the remote rugged moorland of the Scottish Highlands. Are you a gin enthusiast looking to dive deeper into the world of gin? Or perhaps you're just looking for a fun and unique experience to share with friends and family? Either way, our Gin Blending Class is the perfect choice for you. The nose is nicely vegetal, with celery and parsley notes dominating early. Later, citrus, lemon, then banana and a touch of fennel, complex and disarming, it unfolds even further, mild and pine like, more spruce than juniper.

The Crossbill story started in 2012 on a small estate on the outskirts of Aviemore in the Scottish Highlands. A chance meeting at the local pub between two adventurous spirits began a journey for the brand and an idea that an excellent tasting Scottish Gin didn’t have to be complicated. A skilled distiller could tease out various flavours with just two locally foraged botanicals. Crossbill Gin was born and continued to grow before eventually relocating in 2017 to its current home in Glasgow’s famous Barras. The new distillery space, affectionately known as The Hatchery, provided a brand home for Crossbill Gin and additional space for a shop and a gin school where visitors can distil a unique Crossbill Gin. With tonic (one part gin to two parts Fever Tree): Less expressive, restrained, mellows out the tonic, dryness and quinine dominate. Slightly more earthy finish.Crossbill Gin is of this new ilk. Crossbill takes provenance seriously. If you’re going to call yourself Scotland, there better be something from the place in your bottle. I went Tom Collins as the second drink with Crossbill. A little more brisk, with the citrus primarily coming from the fresh lemon. Piney again, but crisp and bright. Nice sharpness to it. The vegetal notes seemed mostly muted and only faintly hinted at until the finish where celery comes through bright and warm. The finish is characteristic for a Tom Collins, long and a bit sour. Overall, Crossbill Gin In this class, you will have the opportunity to create your own unique gin blend using pre-distilled botanical spirits of your choice. Our expert instructors will guide you through the process, sharing their knowledge and tips to help you create a perfectly balanced and delicious gin. Nice and fresh. The character of the juniper really dominates this gin: fresh and almost a touch exotic. This gin has a lot going for it, and I think the end product justifies all the work and effort that went into sourcing and harvesting the juniper. First seen in the craft beer movement and now reflected in spirits, small batch gin is fast becoming a prized commodity. With this in mind we went to the Good Spirits Company on Glasgow’s Bath Street, to speak to spirit expert Matthew McFadyen and mixologist Khi Leonard – a former finalist in the Diageo World Class – about their thoughts and recommendations on some of Scotland’s up-and-coming gins.
